Specialising in a 3-day kitchen audit to uncover what is really happening in their catering department. Followed up by a program of mentoring and training head and senior chefs on site whilst fine-tuning all aspects of the catering operations.
Paul’s passion is mentoring chefs and keeping them on a path of constant growth.
He participates in industry judging, training and development, and has been a member of the Australian Culinary Federation for over 35 years.
With more than 30 years’ experience as an Executive Chef at Restaurants and Hotels and over 45 years in kitchens, including nearly 17 years at Campbelltown Catholic Club as the Executive Chef.
